UK ingredients company Edlong Flavours announced this week that it has developed a new range of authentic European Cheese flavours designed for ready meals - food service and retail - applications.
The company worked on developing a range of powder flavours, available in natural and nature identical versions.
Each flavour has herb, heat, alcoholic or meaty notes which give, Edlong claims, additional twists to the basic cheese profiles. The range includes: Irish cheese flavour for a yeasty cheese sauce; Swiss cheese for a savoury filling for meat, poultry or vegetables; German cheese flavour has smoky cheese and hot sausage notes and the Greco cheese has white brined cheese notes with herbs and black olives.
The range can be used in sauces, ready meals, soups, dips and dressings with many applications requiring less than one per cent in ready-to-eat products, although a five per cent dosage in seasonings and coatings gives a stronger flavour. The products can survive high temperatures and freeze-thaw processes. All products are suitable for vegetarians and do not contain HVPs.
