Hostess Brands, Flowers Foods and Bimbo Bakeries USA are the key majors in the sector, according to the new 2012 Research and Markets report Bakery Product Manufacturing.
The overall market includes around 2,800 commercial bakeries that generate $30bn each year and 6,000 retail bakeries making about $3bn.
“The commercial side of the industry is concentrated: the 50 largest companies generate 75% of revenue,” it said.
However it noted that the retail side is, on the contrary, “highly fragmented”.
Baked breads, mainly white, wheat and rye are the major products and account for 40% of commercial bakery sales.
Rolls, buns, muffins, bagels and croissants make up 20% of sales, 10% comes from soft cakes and remaining sales from pies, pastries, donuts and sweet goods.
