One of the first - but most challenging - products Tetrick started working on at the San Francisco-based firm (formerly Hampton Creek), four years ago, JUST Egg is made from water, mung bean protein isolate, canola oil, gums, and seasonings, and is claimed to look, cook, and taste, just like scrambled egg.
“Whole Foods is where our company started a few years ago and bringing JUST Egg to their customers in every one of their locations will be a special moment for me,” said Tetrick, who said that 70% of consumers in an online survey of 295 adults who indicated that they were ‘likely’ or ‘very likely’ to purchase JUST Egg said that they never or rarely buy eggs, while 95% said they never or rarely buy egg substitutes.
“Passing the five million-egg mark with Whole Foods and Sprouts this spring is something we're all going to be proud of,” added Tetrick, who said distribution (ACV) had already exceeded 15% in the grocery channel as of the end of February.
According to Tetrick, the current cost of production for a conventional egg globally is $0.08, about 60% of which is from animal feed: “Our goal is to get to $0.047 per egg in the next few years and we’re building an infrastructure to make that happen.”
